Why Is Grocery Store Balsamic Vinegar So Cheap?
Like wine, the cost of balsamic vinegar varies significantly depending on the quality. Traditional balsamic vinegar of Modena is carefully regulated and barrel-aged balsamic vinegar can cost $400 for a 100ml bottle. Traditional balsamic vinegar consists of 100% wine must, but most readily available balsamic vinegar are mixed with wine vinegar. Generally speaking, the higher the proportion of wine vinegar to wine must the lower you will find the price. Most “balsamic vinaigrette” consists mainly of wine vinegar. In fact, some commercial kinds of vinegar have been tainted with additives such as caramel.

About the Brand
Difference Between Light and Dark Balsamic Vinegar
"Over twenty years ago we were living in Rome, purchasing Radici of Tuscany products from a small health food store near Rome’s historic center and Radici’s traditional Tuscan goods were packaged in jars, labeled with a photo of their 4 children. Fast forward to Ritrovo’s twentieth year: the four children are all grown up. The label was upgraded years ago—first with a simple graphic of a Tuscan arch and cypress tree, later with a Ritrovo Selections label and full nutrition facts. Some of their rustic products like chestnut spreads are no longer imported while others - like their kale pesto and vegan basil pesto - are now firmly on trend in today’s food landscape. Like Radici products, Ritrovo itself has evolved over its first twenty years. Thanks to the amazing support of our customers and suppliers, we have kept our focus on foods that represent Italy’s traditions and quality. We have also found new ways to interpret Italy’s traditions and raw materials with our own Ritrovo style. We have consistently stayed close to tradition and never compromised quality Twenty years out, our love and passion for Italy and its foodways remain as strong as ever. We season it now with a little of the world’s flavors and our own experiences and evolution. It always remains a “refinding” of something authentic, healthful, and reflection of the real Italian way of eating."
